Preheat the oven to 400F. Scrub potatoes clean and pierce them with a fork. Place on a baking sheet and bake for 30-35 minutes until tender. Let cool slightly.
Cut the baked potatoes in half. Scoop out a small portion of the center, leaving a sturdy base for the skins. Brush the insides and outsides with olive oil, then sprinkle with paprika, salt and pepper.
Return the potato skins to the baking sheet, cut side up and bake for 10-15 minutes until golden and crispy.
Top each potato skins with a small dollop of Delve Garlic Herb Asiago.
Garnish with chives and serve!
